Summer is over, time to blog again...
Well it’s been quite some time since I have written a blog entry...actually I took the summer off to spend some quality time with my family and friends and also I have been SO busy at my office (soon you will know why) - I hope you have missed me, because I certainly missed you and I'm super happy to be back on track!!!

Six Senses Spa
Oh my god..I had a superb massage here at the Six Senses Spa at EvaSon today at one of the open and outdoor sala. It was really amazing... you hear birds singing.. you feel the cool breeze, you see the Andaman Sea, the lotus pond, you smell the essence oil and the lemongrass, you feel the great hands massaging your body..oh my god I could have stayed there for ever!!!

The stylish spa is spread over three floors with ocean views and outdoor salas for a truly relaxing experience. Thai Cooking
I just cannot get bored with Thai food. The variety is endless, the tastes sometimes surprising, odd mixtures of sour, sweet and spicy, flavours to ensnare the senses. I have to say the food here on EvaSon Phuket is some of the best food I ever had!!! Here are 4 great and different restaurants (European, Buffet, Thai, Casual Dining) and you can get pretty much anything you fancy...also the breakfast buffet is phenomenal!
I had the opportunity to spend an afternoon the other day here on EvaSon learning to cook Thai food - and I love that most of the products comes from the resorts own organic garden. This is a recipe from EvaSon Phuket on one of my favorite Thai dishes:

Tom Kha gai (chicken coconut milk soup)
Ingredient:
100 g chicken breast
20 g lemongrass stalk
20 g galangal
20 g shallot
30 g mushroom
5 g kaffir lime leaves
200 ml cocomut milk
1 tbsp fish sauce
1 tsp sugar
1 tbsp lime juice
Garnish:
1 cherry tomato
2 tbsp spring onion
1 corinader spring
chilli oil
Medthod:
1. Combine coconut milk with the galangal, lemongrass, lime leave sh alot in a sauce pan and heat to boiling. Add the chicken fish sauce and sugar.
2. Simmer for about 3 minutes or until the chicken is cooked. Add the mushroom and tomato.
3. Place the lime juice in a serving bowl then pour the soup in a bowl. Garnish with the corinader spring onion and chili oil.

Environmental Friendly Hotel
Everything in EvaSon Phuket & Bon Island is about maintaining the natural beauty and environment…and I love it! I love the way the resort are very green and self sufficient and I love their Six Senses-chain's strong focus on sustainability.
SLOW LIFE is Six Senses-chain mantra: Sustainable – Local – Organic – Wellness Learning – Inspiring – Fun – Experiences.
Most of the food and products that they provide to their guests are made by the hotel group. For example, the shampoo is a special organic formula developed by the Six Senses group and most of their food is organic and grown at the resort itself in their fantastic herb and vegetable garden - in which they are happy to give you a guided tour.
EvaSon focuses on sound waste and water management, energy efficiency, waste management, social responsibility and protecting natural surroundings. Features include a Recycling Corner, bio-diesel plant, composting area, Herb & Vegetable Garden, nursery, waste water treatment plant and fresh water reservoir. At the Recycling Corner different bins are set up for visitors to physically sort through plastic bottles, cardboard, can etc. into the correct bin for recycling.
Garden waste is mixed with organic kitchen waste creating fertile soil, which is used in the Herb & Vegetable Garden to produce fresh vegetables for the kitchen. Rainwater is collected and used throughout the property. Some water is treated to make it suitable for showering, some of it being further treated through reverse osmosis. That water, enriched with minerals, is provided to hosts and guests as drinking water in glass water bottles to enjoy for free. All used water is treated in the waste water treatment plant and used for garden irrigation. All signs and And I could go on and on...there are thought about every little detail here...
